If you’re like I am, you can’t resist buying apples in large quantities during autumn. I always find it a blast to create recipes using my family’s favorite ingredients (in this case it’s oatmeal for Mr. Locke) in our Oven Lovin’ series and I also like to make them fast and easy. This time around it’s Oatmeal Apple Tart filled with ripe apple slices and steel cut oatmeal for texture. Don’t have steel cut? Go ahead and use regular.

Directions for Making Apple Tart
Using a 9-inch pie shell (either store bought or homemade works well), lay the crust flat on a cookie sheet.
Peel apples and slice in 1/8 inch thick slices.
Arrange apples in pie shell making sure there’s at least a one inch margin left to fold over. Remember: lie flat on a cookie sheet not in a pan!
In a separate bowl, mix cinnamon, brown sugar, and steel cut oats together.
