Lemonade Sweet Tea Cupcake Recipe
follow url Recipe makes approximately 12 cupcakes. Preheat oven to 350 degrees.

- 1 1/2 cups AP flour
- 1 teaspoon baking powder
- pinch salt (right around 1/8 teaspoon)

- 1 stick of room temperature butter
- 1 cup of white sugar
- 3 large eggs (or two extra large eggs)
- 3/4 cup Tradewinds Unsweet Iced Tea
- 1 teaspoon vanilla extract
1. Combine all dry ingredients in a separate, medium-sized bowl. Mix together with fork to remove any lumps.
2. In a separate mixing bowl, combine butter and sugar. Beat until light and creamy. Add eggs one at a time and beat until combined. Stir in vanilla.
3. Add 1/2 of the dry mixture, then add 1/2 of the iced tea. Alternate until combined. Beat on high for about 30 seconds and scrape down sides of bowl as needed. Add cupcake papers to muffin/cupcake tin and add batter evenly to all 12 cups.
Bake for right around 20 minutes. Depending on your oven, you may need to add a minute or two so check on the cupcakes every few minutes and test the tops. If they spring back, you know they’re done. Let cool for two minutes and remove the cupcakes, cooling them on the counter or a wire cooling rack.
Lemonade Frosting Recipe
You’ll only need three ingredients for this easy frosting recipe:
- 4 cups Icing sugar/powdered sugar
- Zest and juice of two lemons
- 1 stick of room temperature butter
Ok, this is super simple. Zest both lemons and add zest to a bowl. Set aside. Take those two lemons that you’ve just zested and squeeze all of the juice out of them into another bowl. Add icing sugar to mixing bowl with whisk attachment and beat for a few seconds to remove lumps. Next, Add zest and beat for about 10 seconds. Add juice and beat again. Finally, add the butter, about 1/2 stick at a time. Beat for two to three minutes. Add to piping bag or hand frost.
I thought it was fun to add a sprig of mint to each cupcake to really liven up the look.
